We had a trainee WW leader on Thursday for our meeting - nice lass. She
asked us what she could do to help us, so I said, Bring us a recipe!
She reeled this simple thing off from memory, and it's so good I thought
I'd pass it on:
Zero Point Carrot and Correander Soup
1 pint (20 fl oz - we're in the UK here!) vegetable stock (use stock
cubes of you have to)
1 lb peeled carrots, diced
1 large Spanish onion, diced
A handful or two of chopped coriander leaves
Salt & pepper to taste
Put the stock in a pot and add the carrots and onion: cook until the
carrots are tender (10-15 minutes)
Liquidise: add the coriander seasoning.
I made it for lunch today, and had it with a fresh baguette from the
French Market in town today. Yummy yummy! This quantity makes enough
to be a starter for 4, or a good solid lunch for two. Damn! I've run
out of carrots! Send the Marines! ;P
