My new lunch fave is two slices of Swiis, nuked for 10 seconds to make

My husband has decided to go LC with me, a choice about which I'm thrilled.
He doesn't have a whole lot of weight to lose, but has a job where he's on his feet all night, walks miles and miles using heavy floor-maintaining equipment and has been having problems with his legs (soft tissue), knees and feet (joints). While I like my men "cuddly" rather than skinny or muscle-y, I think that he'll have an easier time if he drops a little weight...40 lbs maybe? Anyway, now I'm thinking about what to pack in his lunches. He works nights, and likes a variety of foods in his lunch which he divides among his breaks and his lunchtime. So far what I'm coming up with are LC soups in a thermos; cold chicken; meat/egg salads; dips w/ pork rinds (wish he'd eat raw veggies); protein shakes in a shaker bottle that he can just add water; string cheese sticks. A lot of the things that are my mainstays, like salads, lettuce wraps, raw veggies/dip, and hard-boiled eggs, aren't an option for him, so I'll have to be a bit creative maybe...but in the end I believe it will be worth it. He is in SO MUCH pain that he lives on ibuprofen and walks with a cane much of the time, and anything that will help him have a more normal life when he's not at work will be worth the effort. I'm totally crazy about him and hate to see him in pain. I didn't adhere strictly to Atkin's induction for the first 2 weeks and probably won't worry about it much for hubby either, in the interest of being able to provide a greater variety for him. I think once he stops drinking his 2-liter bottle of pop every night (he gets really thirsty), that alone will help, along with the severe reduction in carbs. The night shift thread has been very helpful and enlightening also! By default, our 14YO daughter will be eating LC also, since there won't be any carby foods in the house now. She doesn't have a weight issue but eating only veggies, meats, dairy, and some fruit certainly won't hurt her any . Soup in a thermos is also excellent as you stated. Cold smoked turkey legs are available at most stores, as are pre-cooked chicken legs and wings. Home made cold fried chicken will work too. My mother NEVER breaded fried chicken! She fried it in a cast iron skillet using a few herbs and only a bit of olive oil in the pan. It's fabulous and I still make it. Recipe on request. G Stews are more hardy than soups. If you can afford Keto-pasta, pasta salads work too. Google for black soy beans for a delectable treat. The low carb-ness of that specific legume is nearly miraculous. How does he feel about celery? I like to use it to "scoop" meat salads personally. Cheese comes in a hyooge variety. Jerky also works. He would sometimes have pizza on a saturday. Have his burger on top of 1 slice of whole wheat bread - stuff like that. I don't think he gave up the ketchup even! We found that he could eat a sandwich using a thin wrap or even a pita once a week. He cut out sugar & milk, switched to diet sodas, quit caffiene and really limits his bread but has some brown rice with dinner sometimes. Your husband sounds like a junk food guy so making these kinds of changes will help him feel better and lose weight. He can also ween toward LC by not going into it fully at first. Give him cold cuts in a wrap, or cold chicken w/veggies or a small salad that's not just some iceburg lettuce & cucmbers. See if he likes things like arugala, escarole, collard greens, dandelion - these things have alot of flavor and he can invent dressings too! I like a cold mexcian salad with grilled chicken, sour cream, avocado and hot sauce!! That's a manly salad, no? And nuts are a great work snack. I buy a big box of individually portioned peanuts or cashews at the warehouse stores (BJs or Costco or whatever you have) and send them to wrok with my husband. Good luck - keep us posted! |
