Default Ham~n~Cheese Omelet Roll

Ham~n~Cheese Omelet Roll

4 ounces cream cheese, softened
3/4 cup heavy cream
2 Tbs baking mix
1/4 tsp salt
2 Tbs. Dijon mustard
12 eggs
2-1/4 cups shredded cheddar cheese (could try Swiss), divided
2 cups finely chopped fully cooked ham (I grind it)
1/2 cup thinly sliced green onions

Line the bottom and sides of a greased 15x10x1 baking dish with parchment
paper (i just grease the pan well), If you use the paper, grease the paper,
set aside

In mixing bowl, beat cream cheese, and cream till smooth. Add baking mix,
salt, mix well. In a large maxing bowl, beat eggs til blended. Add cream
mixture, mix well, pour into prepared pan.

Bake @ 375 for 30-35 minutes or until eggs are puffed and set. IT ONLY
TAKES me about 20 mins to bake this, watch carefully.

Sprinkle with ham, onions, and 1 cup cheese. Roll up from a short side,
peeling parchment paper away while rolling... Watch for sticking while
rolling. I use a metal spatula and push underneath as I roll it. Sprinkle
top of roll with remaining cheese; bakek 3-4 minutes longer or until cheese
is melted.
