Birthday Dinner
I just came back from a week in North Carolina visiting family. It was my
brother-in-law's birthday and we had a birthday dinner for him. He's been on Atkins a couple months. My sister prepared the dinner and this was what we had: 1) Salad - romaine lettuce, sliced mushrooms, a few sliced cherry tomatoes, some sliced red onion, one diced avocado, crumbled bleu cheese - served with bleu cheese dressing 2) freshly steamed spinach served with butter 3) fresh asparagus sauteed in olive oil, with seasonings and chopped walnuts 4) strip steaks and fresh salmon cooked on the grill (the birthday boy actually cooked these) My contribution was a large LC cheesecake with an almond flour crust, and topped with a can of Lucky Leaf splenda-sweetened SF cherry pie filling. It was yummy. That meal was a feast! A lovely birthday dinner. :-) Debbie |

Look for Lucky Leaf Light Pie Filling. I've bought this brand at Wal-Mart.
They also have apple pie filling sweetened with Splenda Cherry has approx 7 effective grams carb per 1/3 cup Apple has approx 6 effective grams carb per 1/3 cup Very tasty and great for special occasion treats. It is available in *some* grocery stores. The one near my sister in NC
carries it. Sadly almost no supermarkets in NJ seem to carry it, certainly none of the ones I usually go to do. I have found in it NJ at a super Stop and Shop. One disturbing thing I found in NC. The supermarket carried the original SF splenda-sweetened cherry pie filling, but they seemed to be replacing it with Splenda-sweetened SF cherry pie filling "Lite" - which had less fat, but naturally several more grams of carbs than the original. Birthday Dinner
My birthday is this week and I have been back at doing induction for
the past week because of the previous week's vacation in Mexico! It was fab! Anyhow, my girlfriend invited us over for a special birthday meal for me and asked me what I wanted. She does a great garlic rare roast so I selected that with the usual sides. (Mashed turnip and carrots, mashed potatoes and gravy, stuffed mushrooms{lc style}) Additionally she added Spag squash, we brought fauxtatoes, horion wings (first time with those and they were a hit!) and Myra's cheesecake as dessert, thanks to my talented hubby. (As a note, my friend is on a weigh****cher's diet as she started LC'ing first and just didn't want to do that anymore after months, but got me interested) Well; it wasn't induction but it was very good and still on plan, back to induction for the rest of the week, even though who knows what will be planned for supper on my actual birthday (Oct 22nd) So Happy 44 to me this week and I feel better than I have for years. I have to tell you all about my Curves 1 month anniversary and my trip, I'll do that later! Adios! Pam |
