Default LowCarb Mothers Day Dinner

We had my mom and step father over for dinner in celebration of Mother's
Day. They aren't doing low-carb but I prepared it anyways. They are on/off
Weight Watchers (mostly off), both are overweight but not obese.

Dinner:
Spinach Salad:
Baby spinach
Sliced strawberries
Toasted almond slices
Blue cheese dressing

Main Entree:
Grilled delmonico steaks (8 Oz)
Grilled Portabella mushrooms slices brushed with olive oil and crushed
garlic.
Grilled teriyaki shrimp (jumbo shrimp marinated in Carbsense teriyaki
marinade).
Spaghetti squash with alfredo sauce.

Arizona Spring Water

Desert:
Almond pound cake with blueberry sauce and whipped cream.
The recipe for the pound cake has been posted here before.
The blueberry sauce was very easy to make:
2 Cups frozen blueberries
1/4 cup water
3 TBS Splenda
1/2 teaspoon xanthan gum (mix with Splenda)
Mix all ingredients together and heat to a boil then remove from heat and
let cool a bit.

Coffee

They were both very impressed that I can eat this way and still lose weight
(The desert being a very rare treat). I don't think they will switch to
low-carb though.
