Default REC: Strawberries and "Cannoli" Dipping Cream

I came up with this as a dessert for a dinner party I had last night.
Big hit with all. Not just the diabetics! Of which there was only me ; )

STRAWBERRIES AND CANNOLI DIPPING CREAM

4 Servings

1 pint strawberries, wash and dried

Cannoli Dipping Cream:

1 cup heavy cream
1/3 cup Splenda
1/4 teaspoon almond extract
1 teaspoon vanilla extract
1/3 cup whole milk ricotta

Whip heavy cream until foamy, and then add Splenda and extracts.
Continue to whip on high until stiff peaks form.

Gently fold in the ricotta cheese. Place in pretty bowl and garnish
with lemon zest.

Serve with strawberries for dipping.

For whole recipe:
43g carbs
8g fiber
35g net carbs

8.75g per serving

Why is this called cannoli dipping cream? There aren't any cannoli
anywhere in the recipe. I'm sure it's good, but the name makes no sense.

It's the insides of the cannoli, used as a dipping cream.

Cannoli filling is just sugar, ricotta and cream, sometimes pistachio
nuts and chocolate.

Sub in the Splenda and lose the cookie and you've got low carb.
