Default REC: Breakfast Meatballs (OK to freeze)

I leave out the onions here since I really don't enjoy that overpowering
flavor that early...also saves a little on carbs. I like to spice it up
....you could call it "a spicy meatball."



Breakfast Meatballs



6 lbs ground beef

4 lbs of breakfast sausage

8 eggs

2 cups (approx) of chopped onions

1 cup of green peppers

2 lbs shredded cheddar cheese

dry mustard to taste

minced garlic to taste

salt and pepper to taste

low carb catsup about a cup

cream (amount varies, till it looks like no more will soak into the meat
mixture)



Preheat oven to 350°F



Mix well. Make into meatballs.

Bake on cookie sheets or flat pans in the oven at 350°F for about 30 min,
but watch them so they don't over cook.

Store in baggies in freezer for up to 3 months or refrigerate for up to one
week

Microwave to heat and enjoy.
