Default Interesting LC info & recipes in this month's Family Circle

That's great news! I love Family Circle's Recipes. Their Favorite Recipes
cookbook was the one I used the most before low carbing!

Interesting (and unusual) comment about counting carbs in this month's
(April 20) issue of FAMILY CIRCLE magazine, especially considering the

back
cover is a huge advertisement for Atkins cereal and breakfast bars!

They list 5 "low carb" recipes (page 102), and have this caveat at the top
of the page:

"Many manufacturers calculate 'net carbs' by subtracting dietary fiber,
which the body doesn't digest, and certain carbohydrates that don't raise
blood sugar as quickly or as high as regular carbs. But scientists suspect
people vary in how they metabolize various carbs, and the jury is still

out.
Hence, our net carbs per serving is simply all types of carbs minus

dietary
fiber....."

The recipes, btw, average about 15 carbs per serving -- stuffed tex-mex
peppers, herbed roast beef with buttery califlower puree, Spaghetti squash
with savory sauce, smothered burgers with mushroom sauce, and zucchini
lasagna. Good info on how to prepare a spaghetti squash, on page 112.
