Fallback Meals
I'm getting a lot of good ideas from this thread (and hope others
are too). Thanks! My current to-dos (complicated by the fact that the fridge has to house my daughter's birthday cake later today): get chicken and other ingredients for stir-frying or for salads. (I need to put together an all-purpose Thai-style version that I can do quickly!) Start prepping a batch of faux-tatoes... I do feel I should not eat so much bacon and other processed meats. If you get one with the sauce packets in them, don't use them because they're sugary and they don't taste so good anyway. I usually cook the veggies in olive oil and soy sauce, and season with garlic, salt, and pepper. I do a Thai Green Curry stir fry with catfish, sweet (Vidalia type) onions,
green peppers and sometimes eggplant. I follow the recipe for the curry on the green curry jar, it uses a can of coconut milk and some fish sauce, except that I omit the sugar it calls for. I don't substitute for that, have never put it in as my SO doesn't like anything sweet (except me). I cook him some rice to eat with his but just eat mine plain.
