off the diet and how much of the weight you lose is water and how much real

Well, you could do the maths :-)

Let's say 7 days@3750 cal make 26 250 cal
During this time, your need for energy was 2500 cal/day (replace with
your real need dixit Fitday, for instance)
Your calorie intake should have been 2500*7=17500
Difference: 26 250 - 17500 = 8750 cal.
8750 cal is a little more than 1kg of human fat (2.2 lbs)

Knowing that a week is more than enough for liver and muscles to have
reconstitued all their glycogen, you can deduce that the pure water loss
is about (7-2.2)= 4.8 lbs

Here you go.

I wanted to say, I read your stuff when I first started LCing.

I'm doing very well now - blood sugar symptoms have become very
stable, no more headaches (but they predictably come back after
"carb-ups"; I'm so lucky to have this instant feedback system!).

Your site has been a lifesaver at times when I start to feel
discouraged!!
