Could you do something with meat rolls? Years ago my mom made this
appeitizer thing of bologna with cream cheese. She would roll it and
slice it and stab each small slice with a toothpick. Maybe she just
made this for the kids because I only remember her doing it when I was
very small. Anyway, where I was going with that is if you are doing a
deli meat and cheese type thing you could make meat and cheese rollups.
It would look nice on a platter too.

I went to a party once where there were these rolls made with roast beef and
some kind of spiced-up cream cheese in the middle. They were like
pinwheels...I guess they were a whole big slice of roast beef spread with
this tasty cream cheese, rolled up, and sliced...yum.



Right! Something like that might be nice picnic food -- and no one
should miss any bread!

Ah, I'm opposed to "mock" anything really. I'd make a broccoli salad
instead, but that's just me. ;-)

Ooooh! The one with mayo and bacon and stuff? I had a recipe for that,
but lost it. If this is the salad that you're talking about, would you be
willing to post the recipe?

I'm thinking it may have had raisins, too, but we can just leave those out.
They're just humiliated grapes, you know. G

Default holidy help! what does a low-carb picnic look like ?

I am limited to a portable LP grill if I cook on site.
I am trying to
(1) avoid using too much sugar in my cooking (9_9)
especially in the desert part.
(2) reduce fats and cholesterols.
(3) increase fiber intake
(4) reduce caloric intake
(5) provide enough fluids so people don't faint.


Think of it as Memorial Day or 4th of July picnic
for people with diabetes or heart disease....

I think you're asking a lot of your menu.

You want...

Low carb
Low fat
Low cal
High Fiber

I see an all celery meal ; )

I think you have to pick your battles.

After all, you can feed all of the people some of the time, and you can
feed some of the people all of the time, but you can't feed all of the
people all of the time.
