Default Nitrite/nitrate free stuff

At the local heath food store, I've been purchasing Applegate Farms
products. I found out that they have a website:

http://www.applegatefarms.com/

Their stuff is very good, but pricey.

I get that. I do wish I could find nitrite/nitrate-free Niman
Ranch bacon around here though.

My husband and I love those meats, Bob. They are excellent for lunch in
or with a salad. Yum.

They are good! You know what else is really good is the free range beef.
I'm not sure if it's Applegate Farms, but it's excellent.

Coleman Beef. I love Coleman Beef. The closest store that sells it is over 3
hours away. There's no comparison to organic beef in taste.

I don't eat a lot of beef but will consider that for a treat sometime. It's
expensive but I'm sure the taste reflects that.

One thing I bought at our natural foods store (Whole Foods Market, formerly
Bread and Circus) last week that was REALLY good was a frozen piece of wild
Alaskan salmon, not the farmed stuff that now they are finding too high a
level of PCBs in. I thawed it and baked it at a high temp (450F) with some
butter, lemon juice, and dill on it, just until cooked, not dry. Wow! it was
good. I'm going back for another piece to have tonight, while the kids eat
pizza. :-)

Salmon is -- by far -- my favorite fish, so I'll have to look into getting
some real salmon. Thanks for the tip.

Hmmm. I'm going to have to take a closer look at that salmon or
start getting a lot at Trader Joe's. I HATE the farmed stuff.

What's the deal with Nitrates?

I eat lots of packaged slices of Black Forest ham as a snack
