Default Chicken Meatballs

On a recent trip to Costco, after scrutinizing the package label,
I sampled Sabatino's Roasted Garlic and Basil Chicken Meatballs
with Mozzarella Cheese. They were pretty good, with 1 net carb in
a 3-meatball serving. I got some and then was reminded that I
don't particularly like roasted garlic, which tastes acrid and
bitter to me.

Subsequently, I saw Brat Hans chicken meatballs at Whole Foods.
They have a similar flavor plus at least two mo one with pesto
plus a Buffalo-style meatball. I got the latter, which was the
core of my breakfast this morning. I have a fairly high tolerance
for spice, although I now do prefer a slightly lower level of
spiciness so I can taste the flavor nuances. I was surprised to
find that this commercial product was quite spicy when eaten with
no accouterments. Nonetheless, I think this type of meatball is a
nice addition to the prepared LC food cooking arsenal. A serving
size of three meatballs contains 1 g net carbs and is 130
calories, with 80 of those calories coming from fat. The
meatballs do, unfortunately, contain some sugar (or, as they say,
evaporated cane juice crystals).

In addition to the convenience of buying a decent LC product,
these meatballs lead me to thoughts of creating similar things myself.

BTW, I didn't realize that Brat Hans is part of Coleman Natural
Foods.
