Default Tahini carb count?

Saw three different brands at the supermarket. One had 5 total carb grams
and 3 grams of fiber; one had 4 total and 4 grams of fiber, one had 9 total
and 3 grams of fiber.

all were for one tablespoon. Why the discrepency?

The discrepancy is probably because some of the labels are deducting the
fiber from the "total carb" number and others aren't.

Remember that non-US labeling conventions often make manufacturers subtract
the fiber from the "total carb" numbers while US labeling conventions make
them leave the fiber in.

So using your figures
One had 5 total carb grams and 3 grams of fiber.

If the fiber is deducted from the total carb grams, the U.S. total carb
grams would be 8.

one had 4 total and 4 grams of fiber,

Again the total has deducted the carbs, the U.S. label total carb grams
would be 8.

one had 9 total and 3 grams of fiber.

The fiber was not deducted, so the total is 9, one gram more than the
previous label. Possibly rounding, possibly a slightly bigger portion
size--tablespoons rather than milliliters?

..

The rest is probably portion size or rounding .
