Default Keeping low carb while packing and moving

I'm moving back to Stratford Ontario shortly after the upcoming
holidays. I am trying to come up with a suitable low carb food list
with foods that are easy to prepare while being busy packing and
moving and having my life in a bit of disorganization for a few days
until I get settled in my new home.

I've come up with canned fish so far and salads and eggs.

I'm looking for suggestions.

Sausages are easy, you can nuke them in a couple of minutes. Nuke a few
frozen veggies like green beans or broccoli to go with. Cheese is good,
too.

Hard boiled eggs are a perfect "convenience food."

You can make them up ahead of time and if need be you can peel one over the
sink & eat it with your fingers, no dishes, silverwear, etc, required.

Another easy make ahead thing is to put frozen veggies and seasonings in the
plastic tubs that yogurt or olives come in or in disposable containers.

Take it out of the freezer, nuke it, eat it & throw away the dish.

And remember to take along some condiment so that you don't feel deprived -
mayonaise and low carb ketchup and Cardini's Caesar salad dressing are very
very good. Mayo - make the tuna and eggs so much more interesting. Nuts,
esp. brazil nuts and if you can be bothered, sprinkling some italian herb
mix over your food is also good as it increase your intake of potassium -
important since you might sweat a lot and lose quite a bit of minerals after
shifting around tons of stuff while you move.
