new to thread, looking for very simple meal ideas
Hi, I just found this forum and have been reading through a lot of the
posts and it looks like a great community. I've read through most of the Atkins book and some information online and the biggest real challenge is some of the dishes are difficult for me to prepare. A former co-workers who was doing Atkins would make a really good omlet from sausage and eggs I believe he may have even prepared it entirely in a microwave very quick and simple. Does anyone else have any really simple to prepare low carb dishes to spare? Thanks, Tyler |

I copied most of the following from other people's posts:
"fauxtatoes" (cauliflower steamed with a clove of garlic until soft, then mashed with butter and cream cheese). Cream cheese with a little vanilla and sweetener warmed slightly in the microwave. a handful of unsalted almonds and a few shavings of good parmesan cheese roast beef & cheese roll ups with horseradish mayo string cheese and hotsauce/butter dip Pork Rinds dipped in warmed cream cheese- Peppermint Extract and Splenda in a little water- Pecans in melted butter with salt and splenda- Breyers Carb Smart Ice Cream- Pizza using a thin layer of ground beef as crust- Microwaved pepperoni - nuke for a minute on a plate - nice and crispy. Celery, plain, or with a little chive cream cheese a piece of deli roast-beef wrapped around a pickle with some mustard or horseradish. String cheese Cumberland Gap smoked sausage (no sugar in the ingredients---the lowest carb smoked sausage that I have found---sometimes I even eat it cold) Lettuce roll-ups---romaine leaf rolled up with cream cheese and/or deli roast beef or turkey Celery sauteed in a little olive oil with a touch of fresh garlic (not too much!), then braised in a little water/chicken broth---makes a great side dish - take 1 c. frozen berries, and 1/3 c. of cream, a little splenda to taste (but you don't even need it), and blend in a food processor until smooth. It's instant berry ice cream! The above is two nice-sized servings that are 120-140 calories (depending upon what kind of cream you use) and 6 net carbs each. Excellent snack. 1/3 or 1/2 c of ricotta cheese with a little splenda or cinnamon mixed in. pepperoni and cream cheese, and boiled eggs, peeled cut in half, and a dollup of mayo on each half. layers of salami and cheese all kinds of sliced meat and cheese roll-ups |

For breakfast today, I had one of my LC favorites: mock danish
got the recipe from somebody here a long time ago. It cooks in the microwave, very fast. Take 2 ounces of softened cream cheese, and 1 egg - put them in a dish (I use a rounded-bottom coffee mug) and beat them with a fork. There should be lumps of cream cheese floating in the egg (if you beat it too much then it doesn't turn out as good). Then nuke it for a couple of minutes... watch it to see when the egg is done. It will rise a little and turn solid. Then you can sprinkle with splenda & cinnamon OR pour on some sugar-free flavored syrup (my favorite for this is almond roca) Then you eat it. Sometimes I double the recipe, and pour it into 2 dishes so that hubby has one also. Buy a bag of frozen stir-fry type veggies (compare labels to see which veggies have been added (carb content) and make sure no sugar has been added) Buy some cubed chicken. Squirt some olive oil into a large pan, and just stir the chicken & veggies around in it until they are cooked. You can add spices that you like - chinese spices, pepper, onion, garlic, etc. Very simple to prepare and it's yummy. Another favorite of ours is to just go buy a whole rotisserie cooked chicken, ready to eat. (the supermarket here sells whole, cooked chicken for $4) We pull the meat off the bones and eat it. Usually have a salad with it. We de-bone the rest of the chicken and use the leftover cooked chicken in other meals. There are cheaper ways to go if you buy fresh veggies/large unprepped portions of meat, and do the preparation yourself, but I got the impression that you're looking for quick & easy. Crockpot meals are also fantastic. You stick the stuff into the crockpot in the morning, put it on low... leave the house... after work 9 hours later when you come home, the meal is ready to eat. Doesn't get much easier than that.
