Default REC: Coconut Bran Muffins -- High Fibre

I converted this from the recipe on the box of Quaker brand Natural Wheat
Bran and substituted coconut for the raisins. A delicious way to add fibre
to your diet!

Coconut Bran Muffins

Recipe By : Bev-Ann
Serving Size : 12
Categories : Muffins & Quick-Breads

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 tablespoons canola oil
1 tablespoon molasses
3 tablespoons zero-carb sweetener equivalent (I use Sweetzfree)
2 large eggs
1 cup unsweetened soy milk
1 1/2 cups unprocessed wheat bran

1 cup LC bake mix (I use Carbquik)
1/2 cup Brown Sugar Twin
2 tablespoons psyllium husks
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsweetened dried coconut meat

Preheat oven to 400F. Grease muffin tins with margarine.
Beat oil, molasses, Sweetzfree and eggs together in large bowl. Add milk,
and then bran.
In medium bowl, combine dry ingredients. Stir into liquid ingredients.
Fill muffin tins and bake for 18 to 20 minutes.

Cuisine:
"Low-Carb"
Yield:
"12 medium muffins"

Per muffin: 122 Calories; 8g Fat (49.7% calories from fat); 5g Protein; 13g
Carbohydrate; 9g Dietary Fiber; 31mg Cholesterol; 241mg Sodium.
Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Fruit; 1 Fat; 0 Other
Carbohydrates.

Add 3 tablespoons more of the soy milk to make up for the loss of fluid by
reducing the molasses. They were too dry otherwise.
