Default egg pasta on Iron Chef

saw an eppy tonight with egg pasta. he made egg crepes just with eggs
and parsley, cut into strips and then boiled it just like noodles.
this is worth a try. anyone else tried this?

i've made Atkins recipe for pasta with the steamed egg recipe, but
what an ordeal that was. I took eggs and cream, mixed it, cooked over
a double boiler in a sprayed cake pan and covered it ofcourse.
steamed for 20mins then let cool and cut into strips. it was great
with alfredo sauce or chicken "noodle" soup, but it was too much of a
hassle.

the iron chef version of basically thin scrambled/crepes eggs and then
boiled looked much easier. he served it with eggplant, cheese and red
sauce.

anyone else had luck with noodles substitutions? i tried zuchini
slices, but it's a bit wattery.

thanks,

diem

All the Google combinations of "Iron Chef" + "egg pasta" that I was able to
come up with use flour. How exactly was IC's done? And what purpose does the
boiling serve?

I saw the episode last night. I love iron chef!

The egg crepe had "Lots" of flour in it according to the commentator. I
don't remember them boiling the pasta, though. I would think you would
be able to just fry in a non stick pan, slice into noodles, then cover
with sauce. Remember, though, this dish was made by the challenger, but
Iron Chef Sakai won handily.
