I think you're referring to insulin resistance, and those "flours"
that are supposedly less insulin resistant than others, but I can't
know for sure. Unless a person measures that resistance reqularly,
it's impossible to know for sure. Or what effect it's having on your
LDL levels, etc.

Yes, the low-carb pitas contain wheat gluten and some wheat flour.
I like them.


I like canollis, but I don't eat them anymore, because I know the harm
they cause. That's the whole point of eating low-carb, isn't it? To
avoid the foods that cause you to get fat, suffer health problems,
etc? Well, that's why *I* eat low-carb.

You can feel free not to eat them.
