Default Low Carb Recipes to Freeze

Our first baby is due 7 August. A lot of people recommend, a few weeks
before the due date, cooking a lot of recipes and freezing them. This
way, when you get back from the hospital, you have a ton of meals and
don't have to worry about cooking. I'm trying to think of low carb
recipes that freeze well, and I'm having a hard time thinking of them.
Anyone have any recommendations?

Bob, I have few ideas for you, other than Lasagna made with Cabbage
instead of pasta.
But thank You for the great idea, our baby is due in late August, I'll
be able to get to it and do some cooking!
Cheers

can you roast chicken and freeze it? maybe you can make a giant batch of
beef jerky? You may not be able to make & freeze meals but you can eat easy
food after the baby comes. hard boil a dozen eggs at a time, things like
that.

Is Aug 7 for sure or that's an estimated due date (like not a schedualed
c-section or induction date) If it's truly that day then you can stock up
the fridge the day before with cold cuts, rotisserie chicken, get a big bowl
and prep a GIANT salad to eat from all week, hard boil those eggs, etc.

good luck - i know 2 other people due the same week. My SIL is one

I didn't think of the Lasagna with cabbage! That might work! I have no
idea whether the storage will work, but it seems reasonable. I might be
able to drop my wife at home, do a large shopping trip, then we could have
everything we need (including the frozen stuff) for a week ensconced in
the house. It seems like a good idea, but I'll let you know mid-Auguest!

Aug 7 is an estimated due date, but my wife was charting* and is spot-on
with the date of conception.

* you take your temperature and it tells you when you're ovulating,
pregnant, etc.

i've had a couple of kids. My first decided a week early was enough and he
was 10lbs 7 oz at that point. My daughter was getting big and the dr was
worried after my first childbirth so we decided to induce a week early. She
was born 10lbs 5 oz lol Sometimed there are other reasons you end up going
early or late.

As far as things being predictable and chartable that pretty much ends when
you have kids...

it's fun though

Well, I just meant that the due date is as good as it gets. It should be
fun (at times, anyway)!

Try chicken, broccoli and 2 (or1) can of 98% fat free cream of Campbell' s
mushroom soup.
It does have a littl bit of carbs but you can freeze it and it taste great!!
You can also use turkey and do the same.

Bob -

Congrats on the coming addition. Have you thought about getting one
of the vacuum bag thingy's advertised on TV? I've just started
looking at those and haven't made a decision on one yet.
