Default Any soybean experts?

I tasted some toasted/salted soybeans today. They taste much better
than I remember them tasting years ago.

Does anyone know if there are differet varities used to toasting? Some
taste better than others?

Also, are they available without that outside membrane?

Thanks in advance and any recipes welcome.
