Blue Cheese -- How to Use It??
2-3 tablespoons sour cream 1-2 tablespoons mayonnaise 2-3 tablespoons full fat yogurt (if you don't like yogurt, just double the sour cream) 1/2 to 1 clove crushed garlic Mix well, we always do it in the food processor. Add: 1 chunk of blue cheese 2-3 tablespoons of olive oil salt fresh ground pepper Mix again until smooth & then add more blue cheese and give it a couple of quick pulses to mix it in, but leave chunks. MOST IMPORTANT: chill at least overnite before eating. The raw garlic will be overwhelming if you eat it right away, but will mellow if you let it chill long enough. Can't give you calorie counts because none of the meaurments are precise, they are adjusted for each batch to balance the attributes of the cheese. Robyn |

One of our standard side dishes is fresh green beans, tossed with a little olive oil, then spread on a baking sheet and oven-roasted at 350 for about 20 minutes. Then I lay them out on a plate and crumble gorgonzola over them, then nuke 'em for about 30 seconds to melt the cheese. Blue cheese works with this, too -- and toasted, chopped walnuts are a nice additon as well. Dawn |

I loved that combo with apples and pears, and now that you mention it, roasted veggies would work quite well that way. -- Jean B. |
