Default Chuck roast

Hi all,

Chuck roast was on sale and I picked one up. I was wondering about a few
ways to prepare it. I already made this one by browning both sides and then
adding some water, turning the temp down and slow cooking for a few hours.
It came out very tender and excellent. I added onion in the final 45
minutes. I just can't do without that in this dish.

Anyway, what other ways are there to prepare this? I used to add potatoes
and carrots, but just went with onion to cut back on the carbs.

I like to put it in the slow cooker with water or stock, onions, celery
and garlic. It is very yummy after about 6 hours and you get great stock
from it.

Do you have a rotisserie on your BBQ? That would be good

My family likes it when I make small knife cuts and insert garlic cloves
also. I throw one in the crockpot and add some beef based broth (not
bullion as I dont like to add all the sodium but if you prefer you could
use that) and spices like mrs dash and pepper. For veggies to add
flavor celery adds a nice touch. I used the leftovers one time (nearly
falling apart after the time cooking) to make a veggie and meat chili.

Side dishes can change this meal up also, though my kids wont eat
it here theres plenty DH and I like on the side:
Sliced cucumbers, tomatoes and vadalia onions in vinegrette.
Cole Slaw (mines more of a garlic recipe than a trad. sweet one.)
Green beans with a touch of garlic and butter on them.(maybe even throw
in some mushrooms to this one)
Broccoli with a light alfredo sauce.(this one the kids eat all of lol)

I change out the side dishes to make use of sales like that so the
meal using the same meat a couple times in one week seems totally
different.

This is our favorite way to make chuck roast. Perfect!

On Again, Off Again Pot Roast

Recipe By :Margaret Fox (Cafe Beajolais Cookbook)
Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 1/2 pounds chuck roast -- at room temperature
1 teaspoon salt
freshly ground black pepper
3 cloves garlic -- minced
2 yellow onions -- peeled and thinly
sliced

Rub salt, pepper and garlic into chuck roast and place in a Dutch oven.
Cover with the onions.
Cover and place in a 360 degree oven for 1 hour.
Remove cover and bake for 1 more hour
Replace top and bake for 1 more hour.

Default Chuck roast

I do mine in burgundy wine, also add onions. Make gravy with ThicknThin
NotStarch. I do cook carrots with it and limit myself to one with my meal,
sometimes also cook potatoes for my SO. The gravy is good on the meat as
well as the veggies. Here is a good crockpot recipe for chuck roast:

Italian Beef

3-4 lb chuck roast
1 tsp. oregano (not ground)
2 tsp. lemon juice
2 whole cloves
5 bay leaves (3-5 depending on size)
1 pkg. dry beefy onion or onion soup mix.
3-4 pepperoncini peppers, just put slits in them

Season the roast with season salt, garlic powder and pepper. Put in crockpot
with the rest of the ingredients on top of that. Add enough beef broth or
water to barely cover the roast. Cook on slow about 12 or 14 hours. The
easiest way to shred the meat is with a potato masher. Check for seasoning
and then add a couple of dashes of the pepperoncini juice. That is where the
spiciness or heat comes from.

I add chunks of turnips instead of potatoes. Even my kids didn't know they were
turnips until I told them!

light it. Add half a bottle of a good red wine; a bay leaf,
a small bunch of parsley, and a small strip of orange zest
tied together with a string; and plenty of black pepper.
Close tightly and cook over low heat until tender. Remove
meat to a deep platter and keep warm. Fish out the bay leaf
etc. Boil the sauce down over high heat to reduce it so that
it will just coat a tablespoon dipped into it. Adjust the
seasoning. Slice the meat in the platter and pour the sauce
over it.

This goes very good with garlic mashed cauliflower and a
simple salad of greens.

Smoke it in a smoker or cook it in a crock pot.
