Default sugars in low carb

The Atkins stuff I'm familiar with says that when figuring net carbs you
take the carb grams and subtract the fiber grams but NOT the sugar grams.
When I look at most of the new products on the market, it looks like they
subtract the sugars in an effort to make the product look lower sugar than
they really are.....?

What they're subtracting are sugar alcohols (not sugar) to make the product
look lower in carbs. Whether they should or not is debatable.
