Default Atkins Muffins

I made the pancakes and substituted the soy milk with heavy cream, and they
came pretty good, considering I can't have regular pancakes these aren't a bad
replacement!

Since you mentioned pancakes, I got some of the Atkins Buttermilk pancake
mix (that comes in the bag). They are really the best lo carb pancakes I
have eaten so far and I've tried all of them plus homemade. They really
taste like a pancake. I also think Atkins pancake syrup is the best lo carb
pancake syrup of all of them on the market and I've wasted a lot of money
finding out.

I have to disagree. For my taste, it is way too thin, like flavored water.

Log Cabin sugar free, 1/4 cup serving 12g sugar alcohol. Taste/texture is
perfect. I use half that, mixed with a little melted butter.

I made the almond flour pound cake recipe as muffins/cupcakes, and they were great. The recipe is at this link:

I used 2/3 cup of splenda instead of the full cup the recipe calls
for, and I think when I make then again I'll use even less.

When the muffins got a little stale, I crumbled them up, mixed with
melted butter and pecan pieces and toasted it all under the broiler.
This made a nice topping for fruit or yogurt or whatever.
