Default Product Review: "Cooking TLC: Truly Low Carb Cooking, Volume I" by Karen Rysavy

I had so MUCH fun reviewing this month's low carb
cookbook "Cooking TLC: Truly Low Carb Cooking, Volume I" by Karen
Rysavy!

Karen began her own low carb journey three days before her thirty-
fifth birthday. After reading through the book, with tears in her
eyes, she knew, "Dr. Atkins was describing ME. What's more, he swore
there was an easy, healthy way to regain the old me. I finished the
book, and I read it again."

It didn't take Karen long to start "low carbing" with meals for
herself AND her family. Before she knew it, her first cookbook was in
the works.

My daughter and I have spent the last few weeks testing recipes
from "Cooking TLC: Truly Low Carb Cooking, Volume I". Now, if my
daughter can make these recipes, ANYONE can!

Karen's recipes even include special little "secrets" in the
recipe instructions on how to perfect and avoid common mistakes. This
was TRULY a LOW CARB ASSET not only for me, but my cooking challenged
daughter! It was PERFECTION every time we served a meal!

I especially love that Karen was developing recipes that her WHOLE
family, low carb or not, would eat and LOVE. She dedicates her book
to her family, her "official taste testers". As most of you know, my
husband Wayne is one of those "don't give me any low carb stuff" men.
Well, what he doesn't know surely won't kill him. We had NO
leftovers that didn't get gobbled up the next day!

"Cooking TLC: Truly Low Carb Cooking, Volume I" is filled with
over 135 recipes for Appetizers and Snacks, Condiments and Sauces,
Soups and Main Dishes, Vegetables and Side Dishes, and Fabulous
Fakes: Breads and Sweets. Both the front and back are plastic covered
for easy wipe off. Karen includes tips throughout the whole book, the
introduction, IN the recipes and special notes called "did you know".

Karen even gives step-by-step instructions on making your OWN
ingredients for her recipes such as nut flours and nut butter! She
gives a whole page of tips on deep-frying!

I have to share a story about testing Karen's recipes. I had a
day when I needed to get some grocery shopping done. As I looked
through the cookbook, the only recipe for which I had all the
ingredients was "Chicken Alfredo".

I'd only had "Chicken Alfredo" once in my whole life, and it
wasn't a good experience. I was in Minneapolis at a convention and
ordered it in an upscale hotel. That was the first (and I thought)
the last time I cared to eat it, YUK!

I knew Wayne had said he liked "Chicken Alfredo", so I figured I
just whip some up for him (and serve over egg noodles). I could just
grab some of the leftovers I had from the night before for myself.

Wayne came home from work and I served his dinner. He MARVELED
over it. "Wow, I'm loving this recipe testing you're doing. This is
excellent"! Did he know something I didn't know? Well, it DID smell
good when I was cooking it.

I bit the bullet and tasted it.......WOW, it was brilliant! Ax
the leftovers! I made some steamed green beans (as suggested in the
cookbook) and dug in! Not only that, but I had what was left for
breakfast the next day!!

I highly recommend you consider "Cooking TLC: Truly Low Carb
Cooking, Volume I", a "don't wait" purchase for your low carb
lifestyle. This cookbook is simple and easy to follow. The
ingredients are basic with not a lot of "special" ingredients and
substitutions given if you don't have them on hand. The recipes are
