'veg protein' items as substitute for rice etc?

Default 'veg protein' items as substitute for rice etc?

I had some Italian takeout (eggplant, tomatoes, etc in sauce) and discarded
the pasta, so I needed something else to put it on. Hastily tried a
Morningstar "vegetarian sausage patty" and it worked great.

Now I'm wondering about other 'vegetable protein' things as substitutes for
rice, toast, pilaf etc for Mediterranean or Asian dishes. The Morningstar
'sausage patty' has little if any carbs iirc, just 'vegetable protein'.
It's rather spicy already, but there are milder flavors: 'veg chicken',
etc.

I guess the obvious thing would be the 'textured vegetable protein,' TVP,
from the bins at the health food store, as it's already in small roundish
pieces and doesn't have particular flavors added sfaik. But I've never
cooked any. Has anyone?
