Hi guys, I'm after low carb / high protein / moderate fats / high fibre bar
recipes. Does anyone have any that they would like to share please?

Low-carb chocolate chip almond flax-meal bars. I recently developed
this recipe, so it may need some tweeking. Maybe some polydextrose to
help make them more moist?

1 cup almond meal
1 cup flax meal
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 sticks butter, softened
1/2 cup xylitol
3/4 cup sugar-equivalent liquid Splenda (18 drops Splendex)
2 eggs
3 tsp vanilla extract
2 cups sugar-free or bittersweet chocolate chips
(1 cup chopped nuts - optional)

375 degree oven

Combine the two meals, baking soda/powder and salt.

In a large bowl, cream butter with xylitol until fluffy. Add Splenda
and vanilla. Combine eggs and beat well. Slowly add dry ingredients in
2-3 additions and combine well. Add chocolate chips (and nuts, if
desired) and mix until just combined.

Spread mixture into well-greased 9x12" pan and bake until slightly
browned and inserted toothpick comes out clean, about 25-30 minutes.
Cool 5 minutes and cut into bars. Cool completely and removed bars.

I think the second time I made it I only used one cup of chips. YMMV. Enjoy!
