Last night in a new restaurant around the corner, one of the sides
which came with my salmon was sauteed wild mushroom caps (I didn't
hear all the varieties, but I heard the word "trumpets")... The caps
were thin (unlike the caps on your garden variety grocery store
mushrooms), and they had the taste and feel of home fries.

My daughter ordered me to get the recipe.

Anyone here in Brooklyn, NY? The restaurant was City Lighting, on
Flatbush Avenue, where City Lighting Fixtures sold, uh, lighting
fixtures for decades.

Trumpets come in a couple of varieties. The black ones are called "Trumpets
of Death". They're long and thin stems and flared ends make them look like
trumpets. They probably just sauteed them in butter until they were crispy.
Because they're not as meaty as other 'shrooms they don't soak up all the
fat and sit there. Just season with salt and pepper and some fresh chopped
herbs. Thyme and sage are great with mushrooms genrally. Dried herbs won't
do them justice and can taste harsh against the delicate mushroom.
