I've collected a lot of low carb recipes over the years...many from this
newsgroup. I don't see a lot rec posts anymore, so thought I would do
something about that. So, here is the first...
Disclaimer: I can't remember where or from whom many of the recipes I will
post originated, so please accept my apologies if you don't receive proper
credit...here we go...more to come over the next few weeks...
3 10-oz packages frozen spinach, thawed and squeezed dried
8 oz. cream cheese, softened
3 tablespoons mayonnaise
4 tablespoons butter, softened
1/4 cup Half & Half or cream
1/2 cup Parmesan or Romano cheese, freshly grated (divided)
2 minced green onions, optional
2 cups shredded mozzarella cheese, (divided)
§ Blend cream cheese, mayonnaise and butter until light and fluffy.
§ Gradually beat in cream. Stir in spinach, 1/4 cup Parmesan and 1/2
cup
mozzarella.
§ Season to taste with salt and pepper.
§ Place in greased casserole dish, top with remaining Parmesan and
mozzarella cheese.
§ Bake uncovered @ 350F degrees for 30 minutes or until top is
lightly browned.
Variation: add one can artichoke hearts, drained and quartered, to
dish prior to pouring spinach mixture.
