One of my favorite things for lunch is a pickle spear wrapped in a slice
of cheese, a slice of deli meat, with a squirt of mustard inside, held
together with a toothpick. Three of those is a filling meal for me.
After a couple of weeks on low-carb, see if he'll try some raw
vegetables, because his taste buds might change.

My new lunch fave is two slices of Swiis, nuked for 10 seconds to make
em warm, a HB egg and some imitation crab. I love tha stuff. To me,
it's as good as real crab.

My husband has decided to go LC with me, a choice about which I'm thrilled.
He doesn't have a whole lot of weight to lose, but has a job where he's on
his feet all night, walks miles and miles using heavy floor-maintaining
equipment and has been having problems with his legs (soft tissue), knees
and feet (joints). While I like my men "cuddly" rather than skinny or
muscle-y, I think that he'll have an easier time if he drops a little
weight...40 lbs maybe? Anyway, now I'm thinking about what to pack in his
lunches.
He works nights, and likes a variety of foods in his lunch which he divides
among his breaks and his lunchtime. My considerations are that (a) he
doesn't like raw vegetables or salads, (b) he hates standing in line waiting
for his turn at the microwave, since he's on his feet all night, walking
many miles operating heavy equipment - he just wants to sit when he has the
chance, and (c) eggs don't agree with him.
So far what I'm coming up with are LC soups in a thermos; cold chicken;
meat/egg salads; dips w/ pork rinds (wish he'd eat raw veggies); protein
shakes in a shaker bottle that he can just add water; string cheese sticks.
A lot of the things that are my mainstays, like salads, lettuce wraps, raw
veggies/dip, and hard-boiled eggs, aren't an option for him, so I'll have to
be a bit creative maybe...but in the end I believe it will be worth it. He
is in SO MUCH pain that he lives on ibuprofen and walks with a cane much of
the time, and anything that will help him have a more normal life when he's
not at work will be worth the effort. I'm totally crazy about him and hate
to see him in pain.
I didn't adhere strictly to Atkin's induction for the first 2 weeks and
probably won't worry about it much for hubby either, in the interest of
being able to provide a greater variety for him. I think once he stops
drinking his 2-liter bottle of pop every night (he gets really thirsty),
that alone will help, along with the severe reduction in carbs. The night
shift thread has been very helpful and enlightening also!
By default, our 14YO daughter will be eating LC also, since there won't be
any carby foods in the house now. She doesn't have a weight issue but
eating only veggies, meats, dairy, and some fruit certainly won't hurt her
any :). So I won't have to be doing 2 kinds of grocery shopping either...
Anyway...I'm off to do some more googling :).

I've personally had a hard time giving up sandwiches...
While lettuce wraps are better (but your hubby won't eat them!), I've
found low carb flour tortillas to be a godsend. Just read the package
labels carefully!
There are also low carb bake mixes available. Those are used for a
variety of things.
Have him try ice tea with splenda as a substitute for his nightly coke
habits. High fluid intake is never a bad thing. ;-)
Meat salads you've already thought of.
Soup in a thermos is also excellent as you stated.
Cold smoked turkey legs are available at most stores, as are pre-cooked
chicken legs and wings. Home made cold fried chicken will work too.
My mother NEVER breaded fried chicken! She fried it in a cast iron
skillet using a few herbs and only a bit of olive oil in the pan. It's
fabulous and I still make it. Recipe on request. <G>
Stews are more hardy than soups.
If you can afford Keto-pasta, pasta salads work too.
Google for black soy beans for a delectable treat. The low carb-ness of
that specific legume is nearly miraculous.
How does he feel about celery? I like to use it to "scoop" meat salads
personally.
Cheese comes in a hyooge variety.
Jerky also works.

A lot of brands are loaded with sugar! Killed my ketosis they did! :-(
I had to switch back to fish chunks and shrimp, and give up the fake
crab for much later.
<sigh>
I'll sometimes take a chunk of jack cheese and nuke it, then eat it
slowly with a fork. ;-d
Sausages also tend to have sugar as an ingredient.
"Boars Head" brands are mostly sugar free. Higher in price, but worth it
IMHO. I just eat less of the higher priced items. ;-)

Contrary to popular belief, I've found that my food varieties have
expanded once I broke the carb addiction that most american diets are
based on.......
I eat a much large variety of foods now and am enjoying every minute of
it.

He loves the imitation crab too, I don't buy it unless it is on sale
usually...but now that I won't be buying so many of the other foods and
snacks, I will!

that I can try and that I know he'll eat! I actually have some CarbQuik and
also High Gluten Wheat Flour from Netrition so I was also thinking of a
biscuit (2 gm) sandwich once in a while. I'd like to see him break his
dependence on breads/pastas and then start adding them back in more slowly
but really, if I see him struggling I will add those things because I'd
rather do that than see him give up. He's doing this a little reluctantly,
methinks...and given his level of calorie burn, giving up the sugary pop,
and the fact that he doesn't have massive amounts to lose, I won't worry as
much about the details as I did with myself.
Anyway - EXCELLENT suggestions here, I so much appreciate them, Om!!! Wow!

My husband went LC and lost 30lbs (kept it off too) and he was not super
strict either. He would sometimes have pizza on a saturday. Have his burger
on top of 1 slice of whole wheat bread - stuff like that. I don't think he
gave up the ketchup even!
We found that he could eat a sandwich using a thin wrap or even a pita once
a week. He cut out sugar & milk, switched to diet sodas, quit caffiene and
really limits his bread but has some brown rice with dinner sometimes.
Your husband sounds like a junk food guy so making these kinds of changes
will help him feel better and lose weight.
He can also ween toward LC by not going into it fully at first. Give him
cold cuts in a wrap, or cold chicken w/veggies or a small salad that's not
just some iceburg lettuce & cucmbers. See if he likes things like arugala,
escarole, collard greens, dandelion - these things have alot of flavor and
he can invent dressings too! I like a cold mexcian salad with grilled
chicken, sour cream, avocado and hot sauce!! That's a manly salad, no?
And nuts are a great work snack. I buy a big box of individually portioned
peanuts or cashews at the warehouse stores (BJs or Costco or whatever you
have) and send them to wrok with my husband.

serving has 16 MORTOR FORKING gms!!!!!

Um, not to interrupt a perfectly good rant or anything, cause I like one
as well as anyone. But, you do know that there's no magic about 20 grams
of carbs, right? Many people (in fact, probably most) lose just fine at
that level. There are reasons Atkins has people start at that level, but
it's not necessary for good weight loss.
It may have something to do with your rate of weight loss or it may not.

All from sugar, too, right?
That's more critical than simply the fact that it's 16g, in my opinion. I
can lose weight at much higher carb counts, but only if my carbs are coming
from better sources than sugar/corn syrup (that stuff slows my weight like
crazy, regardless of including it in my count).
I would advise just moving into OWL and doing 25 next week. Make sure your
additional carbs are just veggies... add in stuff in order from the carb
ladder, not the stuff you may be missing the most. Add only one new food at
a time so you can tell your body's reaction to each.
I wouldn't be surprised if your weight loss next week is more than you've
already had because of the sugar you've been unknowingly eating.

Look for canned crab meat for your crab fix, and frozen shrimp is
cheaper than fresh....
I was wondering what was killing my ketosis at one point.
Turns out that, and sausage, was the culprit.
Only "Boars head" makes sugar free sausage.

Nah. Check your ketones. If you are making them, you are ok.
Some people can have a little higher carb without it hurting them.
Read read read those labels on ANY prepared foods.

My mother has been taking glucosamine sulfate and MSM. Her knees bother her
a lot less than they used to, she had been on Vioxx and the dr gave her a
handicap parking pass because of them.

Wow!
You don't have to start with induction, it isn't a law or anything. It is

He's doing well, peeing all the time - lol - and eating LOTS more veggies
(cooked - he doesn't like raw) than he usually does. I figured just
omitting that 2-liter bottle of pop every night would have an effect but
didn't realize how much. Between that, and dumping the starchy carby foods
from his diet, he should be in good shape in a couple of months! And your
high protein breakfast comment reminded me that I can put a cup with some
protein shake mix in his lunch also - he'll just have to add water...
