This is a great side-dish with ham or pork chops.
Cabbage with Apple -- Makes 4 servings

2 tbsp canola oil
6 cups shredded cabbage or bagged cole slaw mix
1/3 cup Atkins Morning Start Apple Flavour drink
1 large Granny Smith apple, peeled, cored and chopped
2 tbsp red wine vinegar
3/4 tsp dried thyme
1/4 tsp ground allspice
1/4 tsp salt
1/8 tsp pepper
Heat oil in Dutch oven or large skillet over medium-low heat. Stir in
cabbage and cook, stirring occasionally, until it begins to wilt, 5 to 6
minutes. Stir in apple drink, apple, vinegar, thyme and allspice. Cover
and cook over low heat until cabbage is very tender, 25 to 30 minutes,
stirring occasionally. Season with salt and pepper.
