Do you like pork rinds? I don't, but I have a friend who swears that this
concoction is delicious. So, it might be worth a try (*if*, as I said, you
like pork rinds).

He simply places a slice of low-fat cheese on several pork rinds, microwaves
for a few seconds to melt the cheese and heat the pork rinds...and this is
his version of low-carb "nachos."

It might work for those who don't like plain rinds, too, as the cheese can
mask, or add to, the taste of the rinds.

it -- I use South Beach as my basic guide, and they put emphasis on lean
meats and low-fat cheese (unlike Atlkin). I am still in the "learning
stage" on all this -- it's hard to realize after all those years of watching
fat and buying skim milk, etc., to now see that those same products that I
thought were healthier actually contained more carbs than their
"non-healthy" cousins (and, as a diabetic, my meter definitely tells me to
avoid certain types of carbs such as bread, potatoes, rice, pasta...).

Incidentally, what do the numer after your names refer to?

I can't imagine ever doing low-fat again. Without fail, my weightloss stalls
when I cut back on my fats. Not to mention the taste, ew! LOL!

you are aware that pork rinds are made of pig fat though? Using a low carb
cheese to top your pigs fat is kind of pointless....

you are aware that pork rinds are made of pig fat though? Using a low carb
cheese to top your pigs fat is kind of pointless....

And, you could add jalapeņo slices and browned ground beef to make the
nachos more authentic!

Well, the result of using LF cheese something that is lower in fat and
perhaps lower in calories...taste may leave something to be desired, though.

Well, the result of using LF cheese something that is lower in fat and

Thanks. It was the start/current/goal weights that I asked about. I have
seen that in a number of posts and thought it referred to weight, but I
didn't understand the 3 categories. Now I do (the 3rd being goal weight).

Congratulations! You have made great progress. I have lost 41 pounds since
early June, and I am pleased with that -- I hope I continue as you have.

Thanks! It really is amazing how well LC works, especially when you've tried
EVERYTHING else, and have pretty much given up hope. (as I had) Although I ate
too much today. Good stuff, but far. far too much. I'm not looking foreword to
facing the scale tomorrow. <sigh> Oh well, back on the straight and narrow
ASAP, LOL!

One exception among low fat products is dairy. Milk fat is not that
great for you. Low fat versions have all the good of the high fat
versions. They just have less calories.

you should have eaten the low fat cheese. less calories will equal
less weight put on.

What's wrong with milk fat? If I'm trying to get the fat-soluble vitamins that
milk contains, low-fat would be defeating the purpose. I don't drink milk
anyway (ick), but only keep whole milk in my house for my family. Whole milk is
4% fat, low-fat is 2% fat, I'll keep the benefits of the extra 2%, the calories
won't hurt me.

Well, low-fat cheese on rinds don't mean low fat meal or snack. But, YMMV.
Taste would be my issue. I'd just as soon not eat cheese or eat less of it
than to eat low-fat cheese. Best, eat one or the other, not both and
control calories/carbs.

I just tasted a pork rind for the first time, and it threw me off the
wagon. :) All that fat (kind of cold) freaked me out, so I ate a bunch of
corn chips to clean my mouth.

Maybe that's why the low-fat cheese, to balance the high-fat rind?

I'm sure they can be quite good in some dishes, if used cautiously.

Actually, Swiss cheese is pretty low fat and also very tasty.

You can still average a high fat percent in your diet with low fat
cheeses. It all depends on your tastes. I'd rather save calories on
cheese and have just one more avocado on my salad please. Plenty of fat...
and I LOVE avocado's.
